Nicaragua Finca Los Pinos Organic
The Los Pinos group of family farms are certified organic. Located in Aranjuez, Matagalpa next to the Arenal reserve, the farms total 55 hectares of coffee. The Los Pinos group is led by Byron Corrales, a man of passion and a renowned personality in the Central American coffee community. After four generations, they have refined coffee growing and philosophy: “that coffee production is an art, and that through it, they express their respect and solidarity, as a family to the world”. The coffee crop is combined with areas of planted forest to improve water retention and agricultural products. These passionate farmers follow a comprehensive water management and fertilization systems respecting the agricultural environment.
Our cupping sessions produced a well balanced cup, a medium body with a pleasant mid-grade acidity. The cup tastes of chocolate, lemon/lime citrus notes and hints of vanilla with a clean smooth finish. This one is truly an enjoyable cup. We are roasting these Nicaraguan beans a few degrees above our medium roast, which develops a lovely balanced cup.
