A professional coffee roaster will explicitly say that there are only three shades of coffee; namely light roast, medium roast and dark roast and a few in-betweens. Roasting coffee not only changes the color, aroma and flavor of the bean, but also changes the acidity level, caffeine level and body of the coffee. If you like high acidity, light body, high caffeine, and like enjoy the flavor characteristics of the varietal’s region then, “pick the light roast”. If you like smoky bitter taste of coffee with low acidity, low caffeine and full body then go for the darker roast. If you are somewhere in between the medium roast will better suite your palate.
